Preheat your oven to 375°F (190°C).

Pat the pork loin dry with paper towels, then season it all over with 1 teaspoon of salt, 1 teaspoon of black pepper, the minced garlic, fresh rosemary, and thyme.

In a large ovenproof skillet or roasting pan, heat the olive oil over medium-high heat. Sear the pork loin on all sides until it is golden brown, about 3-4 minutes per side. Remove the pork from the skillet and set aside.

In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened. Then add the apple slices and cook for another 2 minutes until slightly caramelized.

Pour in the white wine and use a wooden spoon to deglaze the pan, scraping up any brown bits at the bottom.

Add the chicken or vegetable stock to the skillet and stir to combine. Nestle the seared pork loin back into the skillet on top of the apples and onions.
