Rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium-sized pot, heat olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the rinsed rice to the pot and stir for a couple of minutes to toast the rice lightly.
Pour in the water, then add the salt and black pepper. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
Let the rice simmer for 15 minutes, undisturbed.
After 15 minutes, remove the lid and evenly distribute the frozen peas and corn on top of the rice.
Cover the pot again and allow the rice to cook for another 5 minutes. This will steam the peas and corn.
After 5 minutes, remove the pot from heat and let it sit, covered, for another 5 minutes to allow the rice to fully absorb the steam.
Fluff the rice gently with a fork to mix the peas and corn throughout the rice.
Garnish with chopped fresh parsley before serving.
Serve warm as a side dish or main dish complement.
