📝 Instructions

12 steps
1

Preheat your oven to 300°F (150°C).

2

Prepare the ribs by removing the membrane from the back of the ribs, if still intact. Pat the ribs dry with paper towels.

3

In a small bowl, mix together the salt, black pepper, paprika, and garlic powder. Rub this seasoning mixture all over the ribs.

4

Place the ribs on a baking sheet lined with aluminum foil. Cover tightly with another sheet of foil and bake for 2.5 hours, or until the ribs are tender.

5

While the ribs are baking, prepare the plum sauce. In a medium saucepan over medium heat, combine the chopped plums, brown sugar, soy sauce, rice vinegar, grated ginger, minced garlic, water, honey, and chili flakes (if using).

6

Bring the mixture to a simmer, stirring occasionally, and cook for 15–20 minutes until the plums are soft and the sauce has thickened slightly.

7

Use an immersion blender or transfer the mixture to a regular blender to puree the sauce until smooth. Taste and adjust seasoning as needed. Set aside.

8

When the ribs are finished baking, increase the oven temperature to 425°F (220°C).

9

Remove the top foil from the ribs and brush a generous amount of the plum sauce over both sides of the ribs.

10

Return the ribs to the oven, uncovered, and bake for an additional 10–15 minutes, or until the sauce is caramelized and sticky.

11

Remove the ribs from the oven and let them rest for 5 minutes before cutting them into individual portions.

12

Serve the ribs hot with extra plum sauce on the side for dipping.
