Rinse the red snapper fillets and pat them dry with paper towels. Lightly season both sides with salt and black pepper.
Zest the lemon and then cut it in half. Extract the juice from one half and reserve the other half for garnish.
Finely mince the garlic cloves and chop the fresh parsley. Set these aside.
Dredge the red snapper fillets lightly in all-purpose flour, shaking off the excess.
Heat a large skillet over medium heat. Add 2 tablespoons of olive oil.
Once the oil is hot, add the red snapper fillets to the skillet, skin-side down if applicable. Cook for 3-4 minutes on one side, then gently flip and cook for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork.
Remove the cooked fish from the skillet and set them aside on a plate. Tent with foil to keep warm.
In the same skillet, add 4 tablespoons of unsalted butter. Allow it to melt and foam slightly, then add the minced garlic. Cook for about 1 minute until fragrant, but do not let the garlic brown.
Stir in the lemon zest and juice and cook for another 1-2 minutes to combine the flavors.
Return the red snapper fillets to the skillet and spoon the lemon butter sauce over the top. Cook for an additional 1-2 minutes on low heat to reheat the fish.
Transfer the fillets to serving plates and drizzle any remaining sauce over the top.
Garnish with fresh parsley and lemon slices from the reserved half. Serve immediately.
