Rinse the dried navy beans under cold water and remove any debris. Place them in a large bowl and cover with water. Soak the beans overnight or for at least 8 hours.

After soaking, drain and rinse the beans. Set aside.

In a large oven-safe pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon from the pot and place on a paper towel-lined plate. Reserve about 2 tablespoons of the bacon drippings in the pot.

In the same pot with the reserved bacon drippings, add the diced onion. Cook for 5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for 1 minute until fragrant.

Add the soaked and drained beans to the pot, followed by the water and chicken broth. Stir everything together until combined.

Bring the mixture to a simmer over medium heat. Once simmering, cover the pot with a lid and transfer it to the preheated oven.

Bake the beans for 3 to 4 hours, stirring occasionally, until the beans are tender and the sauce is thick. If the mixture appears too dry, add a splash of water as needed.
