Preheat your oven to 400Β°F (200Β°C).
Cut the acorn squashes in half lengthwise and scoop out the seeds.
Drizzle 1 tablespoon of olive oil over the cut sides of the squash halves. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Place the squashes cut-side down on a baking sheet lined with parchment paper or foil. Roast in the oven for 25-30 minutes, until the flesh is fork-tender.
While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat.
Add the ground Italian sausage to the skillet and cook for 5-6 minutes, breaking it up with a spoon, until browned and cooked through.
Stir in the diced onion, minced garlic, and diced apple (if using). Cook for another 3-4 minutes until the onions are softened.
