📝 Instructions

8 steps
1

Cut the pork shoulder into 1-inch cubes and season with salt and pepper.

2

Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the pork cubes until browned on all sides, about 5-6 minutes. Remove the pork and set aside.

3

Reduce heat to medium, and add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion, minced garlic, and sliced carrots. Sauté for 5 minutes until softened.

4

Stir in the canned diced tomatoes (including their juices), drained and rinsed white beans, chicken broth, fresh thyme, and bay leaf. Return the pork to the skillet and mix everything together.

5

Bring the mixture to a gentle simmer. Cover the skillet and cook over low heat for 25 minutes, stirring occasionally.

6

While the cassoulet simmers, melt the butter in a small skillet. Add the panko breadcrumbs and toast over medium heat until golden brown, about 3-4 minutes. Set aside.

7

Preheat the broiler on high. Remove the skillet lid, sprinkle the toasted breadcrumbs evenly over the cassoulet, and broil for 2-3 minutes until the top is golden and crisp.

8

Remove the bay leaf, garnish with fresh parsley, and serve warm.
