Rinse the chana dal thoroughly and soak it in water for about 30 minutes.
Drain the soaked chana dal and pressure cook it with 1.5 cups of water for 3-4 whistles until it becomes soft but not mushy.
Once the pressure releases, strain the dal to remove excess water. Mash the cooked dal slightly.
In a heavy-bottomed pan, add mashed dal and jaggery. Cook on medium heat until the jaggery melts completely.
Stir continuously, adding cardamom powder and nutmeg powder, and cook until the mixture thickens and forms a firm consistency (this mixture is called puran). Allow it to cool.
In a mixing bowl, combine all-purpose flour, turmeric powder, salt, and 2 tablespoons of ghee. Mix well.
Add water little by little to the flour mixture and knead until you get a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 20 minutes.
Divide both the dough and the puran mixture into equal-sized portions, approximately 8-10 balls each.
Take one portion of the dough and flatten it slightly. Place a ball of puran in the center and seal the dough around it to encase the filling.
Gently roll out the filled dough ball into a circle, about 7-8 inches in diameter, using a rolling pin. Be careful not to let the filling spill out.
Heat a tawa (griddle) over medium heat and carefully place the rolled puran poli on it.
Cook for a minute or until you see bubbles forming, then flip and apply a little ghee on the cooked side.
Press gently with a spatula and cook until both sides are golden brown with small brown spots.
Remove from heat and apply a little more ghee on top if desired.
Serve hot with a dollop of ghee or as is. Enjoy the rich and sweet flavors of puran poli!
