Trim any excess fat from the pork shoulder, but leave a small amount to help keep the meat moist while cooking.
In a small bowl, combine the salt, black pepper, smoked paprika, garlic powder, and brown sugar. Rub this spice mix evenly over the pork shoulder on all sides.
Place the sliced onion at the bottom of the slow cooker to form a bed for the pork.
Pour the apple cider vinegar and chicken broth into the slow cooker.
Place the seasoned pork on top of the onions in the slow cooker.
Cover the slow cooker with the lid and cook on LOW for 8-10 hours, or on HIGH for 5-6 hours, until the pork is tender enough to easily shred with a fork.
Once the pork is cooked, carefully remove it from the slow cooker and place it on a large cutting board. Use two forks to shred the meat, discarding any large pieces of fat or bone if using bone-in pork.
Strain and discard most of the liquid in the slow cooker, reserving about 1/2 cup of the cooking liquid.
Return the shredded pork to the slow cooker along with the reserved cooking liquid and barbecue sauce. Stir to combine.
Set the slow cooker to WARM and let the meat absorb the flavors for 15-20 minutes before serving.
Serve the pulled pork on hamburger buns or slider buns, or enjoy it on its own with your favorite sides!
