Preheat your oven to 375Β°F (190Β°C).
Slice the tops off the onions and peel off the outer layers, keeping the onions intact. Cut a small slice off the bottom to create a flat base so they can stand upright.
Hollow out the center of each onion using a spoon, leaving about 2-3 layers of onion to form a sturdy shell. Reserve the removed onion centers for another recipe or discard.
Brush the onions with olive oil and place them in a baking dish. Bake the onions for 25 minutes, or until they are slightly tender.
While the onions are baking, peel and dice the potatoes into chunks. Place the potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes, or until fork-tender.
Drain the potatoes and mash them in a bowl. Add butter, milk, salt, black pepper, garlic powder, and half of the cheddar cheese to the mashed potatoes. Mix until well combined and creamy.
Remove the onions from the oven. Carefully stuff each onion with the mashed potato mixture, pressing it in gently to fill the cavity.
Sprinkle the remaining cheddar cheese on top of the stuffed onions.
Return the stuffed onions to the oven and bake for another 20-25 minutes, or until the cheese is melted and golden brown.
Remove from the oven, sprinkle with fresh parsley, and let rest for 5 minutes before serving. Enjoy!
