Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash the potatoes thoroughly and pat them dry. Leave the skins on for added crispiness.

Place each potato on a cutting board. Place two wooden chopsticks or the handles of two wooden spoons parallel to the sides of the potato to act as a guide. Slice the potato crosswise into thin, even slices about 1/8 inch apart, being careful not to cut all the way through (the chopsticks will help prevent this).
