Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Gently clean the Portobello mushroom caps with a damp paper towel and remove the stems. If desired, use a spoon to carefully scrape out the gills from the underside of the mushrooms.
Mince the garlic cloves and set aside.
In a small bowl, mix the olive oil, minced garlic, fresh thyme leaves, salt, and black pepper.
Brush the seasoned olive oil mixture generously over the tops and undersides of each mushroom cap.
