Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Clean the portabella mushroom caps with a damp paper towel, and gently remove the stems. Using a spoon, scrape out the gills from the underside of the caps to make room for the filling.
Brush both sides of the mushroom caps with olive oil and sprinkle with salt and black pepper. Place them on the prepared baking sheet, gill-side up.
