Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Lightly dust a clean surface with flour and roll out the pizza dough to about 1/4-inch thickness.
Using a round cookie cutter or a glass, cut 12 circles from the dough, approximately 3 inches in diameter.
Place the dough circles on the prepared baking sheet. Spoon about 1 teaspoon of pizza sauce into the center of each circle and spread it slightly, leaving a small border around the edges.
Sprinkle each circle with shredded mozzarella cheese, being careful not to overfill so you can still shape the edges.
Fold each dough circle in half to form a semi-circle, gently pinching the edges together to seal. These will be the 'rat' bodies.
Cut the pepperoni slices into small triangles to mimic rat ears and gently insert two ears into the sealed edge of each dough piece.
Slice the black olives into small pieces to form 'eyes' and press two pieces into each rat's face. Slice thin strips from the red bell pepper to create 'tails' and tuck one strip into the back of each dough piece.
In a small bowl, whisk the egg with 1 tablespoon of water to create an egg wash. Brush the surface of each dough 'rat' with the egg wash to create a golden finish while baking.
Bake in the preheated oven for 12-15 minutes, or until the dough is golden brown and the cheese is melted.
Remove the 'Pizza Rats' from the oven and allow them to cool slightly before serving.
