Season both sides of the pork chops with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the pork chops on each side for 3-4 minutes until golden brown. Remove from the skillet and set aside.
In the same skillet, add pineapple chunks, pineapple juice, soy sauce, honey, and minced garlic. Stir and bring to a simmer.
In a small bowl, whisk together cornstarch and water, then add the mixture to the skillet. Stir until the sauce thickens, about 2-3 minutes.
Return the pork chops to the skillet and spoon the pineapple glaze over them. Cover with a lid and let simmer on low heat for 8-10 minutes, or until the pork chops are fully cooked and reach an internal temperature of 145Β°F (63Β°C). Remove from heat.
While the pork chops are cooking, prepare the rice. In a medium saucepan, combine white rice, chicken broth, and butter. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and serve alongside the pork chops. Spoon extra pineapple glaze over the rice for added flavor.
Garnish with sliced green onions, if desired, and serve immediately.
