📝 Instructions

9 steps
1

1. Prepare all ingredients: Peel and finely chop the pineapple, mince the garlic, finely chop the red onion, and grate the ginger.

2

2. In a medium saucepan, combine the pineapple, brown sugar, white vinegar, red onion, ginger, garlic, raisins, crushed red chili flakes, salt, and water.

3

3. Add the cinnamon stick and cloves to the saucepan.

4

4. Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to dissolve the sugar.

5

5. Once the mixture starts bubbling, lower the heat to medium-low and continue to simmer uncovered for 25–30 minutes, or until the chutney thickens to your desired consistency. Stir occasionally to prevent sticking.

6

6. Once the chutney thickens, remove the saucepan from heat and discard the cinnamon stick and cloves.

7

7. Let the chutney cool to room temperature. It will continue to thicken as it cools.

8

8. Transfer the chutney to a clean, airtight jar or container and refrigerate. It will keep for up to 2 weeks.

9

9. Serve the pineapple chutney as a condiment with grilled meats, on a charcuterie board, or alongside cheese and crackers.
