Preheat your oven to 190Β°C (375Β°F). Lightly grease a medium-sized baking dish and set aside.
Cook the pasta in a large pot of salted boiling water according to the package instructions, until al dente. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 1β2 minutes until it forms a smooth paste and starts to bubble.
Gradually add the milk, a little at a time, whisking continuously to avoid lumps. Cook for 3β5 minutes until the sauce thickens.
Stir in 100g of grated cheddar cheese and all of the parmesan cheese until melted and smooth. Add the mustard (if using), salt, and black pepper, stirring to combine.
Remove the sauce from heat and gently fold in the tuna, peas, corn, and cooked pasta until evenly combined.
Transfer the mixture into the prepared baking dish and spread it out evenly.
In a small bowl, combine the breadcrumbs, remaining cheddar cheese, and olive oil or melted butter. Sprinkle this mixture evenly over the top of the casserole.
Bake in the preheated oven for 20β25 minutes, or until the top is golden and crispy.
Let the Tuna Mornay cool slightly for 5 minutes before serving.
