Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Cut the bell peppers lengthwise into quarters and remove the seeds and membranes. Aim for wide, flat pieces that can be wrapped around the filling.
