Creamy, comforting, and deeply rooted in traditional British cooking, Pease Pudding is a hearty dish made from tender yellow split peas simmered to perfection with aromatic onion and a bay leaf. This classic recipe, naturally gluten-free, is enriched with butter and a hint of nutmeg for a velvety texture and warm, earthy flavor. With minimal prep and just a handful of pantry staples, it transforms into a versatile delight that can be served warm as a side dish, complementing roasted meats, or enjoyed cold as a savory spread on bread or crackers. Ready in under two hours, this protein-packed dish is a simple yet satisfying way to celebrate wholesome, old-world flavors.
Rinse the yellow split peas thoroughly under cold running water until the water runs clear.
In a large pot, combine the rinsed split peas, water, peeled and halved onion, and bay leaf.
Bring the mixture to a boil over medium heat. Skim off any foam that rises to the surface, then reduce the heat to low and cover the pot with a lid.
Simmer for 60–75 minutes, stirring occasionally, until the peas are very soft and most of the water is absorbed.
Remove and discard the onion and bay leaf from the pot.
Using a masher or an immersion blender, mash the soft peas until smooth and creamy. Add butter, salt, black pepper, and ground nutmeg, and stir well to incorporate.
Adjust the seasoning to taste, adding more salt or pepper if necessary.
Cook the mashed mixture over low heat for an additional 5–10 minutes, stirring frequently, to achieve your desired consistency.
Serve the pease pudding warm as a side dish or allow it to cool and use it as a spread for bread or crackers. Enjoy!
