Prepare the apples by peeling, coring, and chopping them into small chunks. Do the same for the peaches, removing the pits and chopping them as well.
In a large saucepan or pot, combine the chopped apples, peaches, water, and lemon juice.
Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally.
Allow the fruit to cook for 25–30 minutes or until both the apples and peaches are very soft. Stir occasionally to prevent sticking.
Once the fruit is tender, remove the saucepan from the heat. Using an immersion blender, process the mixture until smooth. Alternatively, transfer the mixture in batches to a blender and blend until smooth.
Taste the applesauce and, if desired, stir in granulated sugar and ground cinnamon. Blend briefly again to incorporate the additions.
Allow the Peach Applesauce to cool to room temperature, then transfer it to an airtight container.
Refrigerate the applesauce for at least an hour before serving to enhance the flavor. Serve chilled, warm, or at room temperature.
