πŸ“ Instructions

11 steps
1

Wash the colocasia leaves thoroughly and pat them dry. Cut off their thick stem if necessary.

2

In a mixing bowl, combine gram flour, tamarind paste, jaggery, chili powder, turmeric powder, garam masala, sesame seeds, salt, and asafoetida.

3

Gradually add water to the mixture, stirring well to form a thick, smooth paste.

4

Place a leaf face down and apply a thin layer of the paste evenly on it. Layer another leaf on top, repeat the process for 3-4 leaves.

5

Once layered, fold the sides of the leaves towards the center and carefully roll them up tightly.

6

Repeat the process with the remaining leaves and paste.

7

Steam the rolls for about 20-25 minutes until cooked through and firm.

8

Allow the steamed rolls to cool slightly before slicing them into 1/2 inch thick pieces.

9

Heat oil in a pan, add mustard seeds and let them splutter.

10

Add the sliced patra pieces to the pan and fry lightly until they are slightly crispy.

11

Garnish with chopped coriander leaves before serving.
