Heat a pan over medium heat and add 1 teaspoon of oil.
Add the toor dal and chana dal to the pan and roast them until they become golden brown and aromatic. Stir continuously to avoid burning.
Remove the roasted lentils from the pan and set aside.
In the same pan, add the curry leaves and dry roast them until they become dry and crisp.
Add the dry red chilies to the pan and roast until they puff up and become crispy. Be careful not to burn them.
Add the black peppercorns, coriander seeds, and asafoetida to the pan, and roast for a minute until fragrant.
Turn off the heat and let all the roasted ingredients cool completely.
Once cooled, combine the roasted lentils, spices, and salt in a blender or spice grinder.
Blend to a fine powder. You may need to do this in batches depending on the size of your blender.
Store the paruppu podi in an airtight container. It can be stored at room temperature for up to a month.
Serve the paruppu podi with hot rice and a drizzle of ghee for a delicious meal.
