Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
Scrub the sweet potatoes clean under running water. Pat them dry with a kitchen towel.
Place the whole sweet potatoes on the prepared baking sheet and bake for 30-40 minutes, or until they are tender when pierced with a fork.
Remove the sweet potatoes from the oven and let them cool until they are safe to handle, about 10 minutes.
Cut each sweet potato in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato on the skin. Save the scooped flesh for another recipe, such as mashed sweet potatoes or soups.
Brush the inside and outside of the sweet potato skins with olive oil.
In a small bowl, mix together the garlic powder, smoked paprika, salt, and black pepper. Sprinkle this spice mixture evenly over the sweet potato skins.
Place the skins cut-side down on the baking sheet and roast them for 10 minutes. Flip them over and roast for an additional 5 minutes, cut-side up.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the skins. Return them to the oven and bake for another 5-7 minutes, or until the cheese is melted and golden.
Garnish the sweet potato skins with chopped parsley, if desired. Serve warm with sour cream on the side for dipping.
