Rinse and peel the Yukon Gold potatoes. Cut them into bite-sized cubes, approximately 2 cm.
Place the potato cubes in a large pot and cover with cold water. Add a pinch of salt to the water, then bring it to a boil. Reduce the heat to a simmer and cook the potatoes for 12β15 minutes, or until they are fork-tender.
While the potatoes are cooking, finely mince the shallots, chop the parsley, and snip the chives. Set these aside.
