Peel the papaya, remove the seeds, and dice the flesh into small cubes (about 1/2 inch). Place the diced papaya in a medium-sized mixing bowl.
Wash and dice the red bell pepper into small pieces. Add it to the bowl with the papaya.
Finely chop half of a medium red onion and add it to the mixing bowl.
Remove the seeds and finely dice the jalapeño pepper. Add it to the bowl. Be careful when handling the jalapeño and wash your hands thoroughly afterward.
Chop the fresh cilantro and measure out 1/4 cup. Add the cilantro to the bowl.
Cut the lime in half and squeeze the juice over the ingredients in the bowl.
Season the salsa with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust the seasoning to taste if needed.
Gently toss all the ingredients together until well combined.
Chill the salsa in the refrigerator for at least 10 minutes to allow the flavors to meld. Serve chilled.
