Place the tamarind pulp and water in a medium saucepan over medium heat.
Cook for 5β7 minutes, stirring occasionally, until the tamarind pulp softens and starts to break down.
Add the pitted Medjool dates to the saucepan and continue cooking for another 5 minutes to allow the dates to soften.
Remove the saucepan from the heat and let the mixture cool slightly.
