With only 10 minutes of prep, this lemonade is the ultimate refreshing treat for family gatherings, picnics, or any sunny afternoon.
Wash the strawberries thoroughly under cool running water, then hull them by removing the green tops.
Place the strawberries in a blender. Add 1 cup of cold water to the blender to help with blending. Blend until smooth and there are no chunks of fruit remaining.
Pour the blended strawberry mixture through a fine-mesh sieve or cheesecloth into a large pitcher to separate the seeds and pulp, pressing with a spoon to extract as much liquid as possible. Discard the seeds and pulp.
In a small bowl or measuring cup, mix the raw honey with 1/2 cup of warm water until fully dissolved.
Add the freshly squeezed lemon juice, the dissolved honey mixture, and the remaining 2 1/2 cups of cold water to the pitcher with the strained strawberry liquid. Stir thoroughly to combine.
Taste the lemonade and adjust sweetness by adding additional honey if desired, stirring well to dissolve it completely.
Add the ice cubes to the pitcher or directly to serving glasses to keep the lemonade chilled.
Serve immediately, garnished with fresh mint leaves if desired, and enjoy your Paleo Strawberry Lemonade!
