Rinse the fresh spinach thoroughly and remove any tough stems.
In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the spinach and sautΓ© for 2-3 minutes until wilted. Remove the spinach from the skillet and allow it to cool slightly.
Finely chop the onion, garlic, and parsley. Set aside.
Once the spinach has cooled, carefully squeeze out excess liquid using your hands or a clean kitchen towel. Finely chop the spinach and place it in a mixing bowl.
Add the chopped onion, garlic, parsley, almond flour, eggs, sea salt, black pepper, and optional nutritional yeast to the bowl with the spinach. Mix well until a cohesive mixture forms.
