Preheat your oven to 350°F (175°C). Grease six ramekins with ghee and set them aside on a baking sheet.
In a small saucepan, combine the honey and water. Heat over low heat, stirring occasionally until the honey is dissolved and forms a syrup. Set aside to cool.
In a mixing bowl, whisk the egg yolks until they are well combined and slightly frothy.
Add the cooled honey syrup, coconut milk, vanilla extract, and salt to the bowl with the egg yolks. Whisk until all ingredients are thoroughly combined.
Stir in the shredded coconut, ensuring it's evenly distributed in the mixture.
