The addition of vanilla extract and a splash of fresh lime juice adds a subtle depth of flavor, while a touch of gelatin ensures a perfectly airy, spoonable texture. With just 20 minutes of prep time and minimal cooking, it’s a quick and refreshing dessert that’s perfect for summer gatherings, or anytime you want to enjoy a tropical burst of flavor. Serve it cold and garnish with fresh mango slices or shredded coconut for an irresistible presentation!
Peel and pit the mangoes, then chop the flesh into small chunks.
Place the mango chunks into a blender and blend until smooth, yielding about 1 1/2 cups of mango puree.
In a small bowl, combine the gelatin powder and water. Let it sit for 5 minutes to bloom.
Meanwhile, in a small saucepan over low heat, heat the coconut milk and honey until the honey is fully dissolved and the mixture is warm, but not boiling.
Add the bloomed gelatin to the warm coconut milk mixture, stirring until the gelatin is completely dissolved.
Remove the saucepan from heat and stir in the vanilla extract and lime juice.
Combine the mango puree and the coconut milk mixture in the blender and blend until smooth and well combined.
Divide the mango mousse evenly among four serving cups or bowls.
Chill in the refrigerator for at least 2 hours, or until set.
Serve chilled, optionally garnished with a few mango slices or a sprinkle of shredded coconut.
