Indulge in the creamy, naturally sweet delight of Paleo Homemade Sweet Yogurt, a dairy-free alternative that's both gut-friendly and delicious. Crafted with full-fat coconut milk, fragrant vanilla bean, and a touch of honey, this recipe is enriched with probiotic cultures for optimal digestion. The simple, no-boil method uses gelatin powder to achieve a luscious texture, while the fermentation process ensures a tangy zing tailored to your taste. Perfect for Paleo enthusiasts, this yogurt sets beautifully in the fridge and can be served with fresh fruit, nuts, or seeds for a nourishing snack or breakfast. With minimal effort and wholesome ingredients, this recipe proves that Paleo-friendly treats can be as satisfying as they are health-conscious.
In a medium saucepan, pour 800 ml of full-fat coconut milk.
Sprinkle 1 teaspoon of gelatin powder over the milk and let it sit for a few minutes to bloom.
Meanwhile, slice the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the coconut milk.
Warm the saucepan over medium heat until the gelatin dissolves completely, and the coconut milk is warm but not boiling. This should take about 3-5 minutes.
Remove the saucepan from heat and allow it to cool to a lukewarm temperature (about 105°F/40°C).
Once the mixture has cooled, remove the vanilla bean pod, and add 2 tablespoons of honey. Stir thoroughly until the honey is well incorporated.
Open the probiotic capsules and stir the powder into the mixture, discarding the capsule shells.
Pour the mixture into clean glass jars or a yogurt maker container.
Cover the containers with clean cloths or jar lids, and let them sit in a warm place for at least 12-24 hours to ferment.
Taste the yogurt after 12 hours; for a tangier flavor, allow it to ferment longer.
Once fermented to your taste preference, refrigerate the yogurt for at least 4 hours to set further and chill.
Serve chilled as is or with fresh fruit, nuts, or seeds according to your Paleo dietary preferences.
