Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until fully cooked, approximately 7 minutes per side. Once cooked, allow to cool slightly before shredding finely.
