Preheat a grill pan over medium-high heat.
Slice the chicken breast in half horizontally to make two thinner pieces.
In a small bowl, mix olive oil, garlic powder, onion powder, sea salt, and black pepper.
Brush the chicken pieces with the seasoned olive oil mixture.
Grill the chicken for about 5-6 minutes on each side, or until fully cooked and juices run clear. Remove from the grill and let it rest for a few minutes.
While the chicken is resting, place a slice of dairy-free cheese on each piece of almond flour bread.
On one slice of the bread, place the grilled chicken on top of the cheese.
Add the sliced tomato and lettuce leaves on top of the chicken.
Cover with the second piece of almond flour bread, cheese side down, to form a sandwich.
Place the sandwich back on the grill pan and press down gently with a spatula. Grill each side for about 2-3 minutes until the bread is toasted and the cheese has melted.
Remove the sandwich from the grill pan, slice in half, and serve immediately.
