πŸ“ Instructions

10 steps
1

Fill a large pot with water and bring it to a boil. Meanwhile, prepare the artichokes by cutting off the top inch of each artichoke's leaves with a sharp knife and trimming the stems to about 1 inch in length.

2

Cut the large lemon in half. Rub the cut edges of the artichokes with lemon to prevent them from browning. Squeeze the remaining juice into the pot of boiling water.

3

Add the prepared artichokes into the boiling water, reduce heat to a simmer, cover and cook for about 15-20 minutes until the bases can be easily pierced with a fork.

4

While the artichokes are boiling, prepare the marinade by mincing the garlic cloves. In a small bowl, mix together the olive oil, minced garlic, sea salt, and black pepper.

5

Preheat a grill or grill pan over medium heat.

6

Once the artichokes are boiled, remove them from the water and let them cool slightly. Slice them in half lengthwise and scoop out the fuzzy choke with a spoon.

7

Brush each artichoke half generously with the garlic olive oil marinade.

8

Place the artichokes cut-side down on the preheated grill, and cook for 5-7 minutes until grill marks appear and the artichokes are heated through.

9

Remove the artichokes from the grill and sprinkle them with freshly chopped parsley before serving.

10

Serve the grilled artichokes warm, either alone or with your favorite Paleo-friendly dipping sauce.
