Fill a large pot with water and bring it to a boil. Meanwhile, prepare the artichokes by cutting off the top inch of each artichoke's leaves with a sharp knife and trimming the stems to about 1 inch in length.

Cut the large lemon in half. Rub the cut edges of the artichokes with lemon to prevent them from browning. Squeeze the remaining juice into the pot of boiling water.

Add the prepared artichokes into the boiling water, reduce heat to a simmer, cover and cook for about 15-20 minutes until the bases can be easily pierced with a fork.

Preheat a grill or grill pan over medium heat.
