Finely chop half a medium red onion and add it to a medium bowl with the tomatoes.
Roughly chop fresh cilantro and add 1/4 cup to the bowl with tomatoes and onions.
Cut the small jalapeño pepper in half, remove seeds and finely chop. Add to the bowl. Handle with care to avoid irritation.
Peel and mince the garlic cloves, then add them to the bowl.
Drizzle 2 tablespoons of fresh lime juice and 1 tablespoon of extra virgin olive oil over the mixture.
Sprinkle with sea salt and black pepper, using 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Gently mix all ingredients until well combined.
Taste and adjust seasoning if necessary. Set the dip aside for at least 10 minutes to allow flavors to meld.
Serve the dip with Paleo-friendly chips or fresh vegetable sticks.
