Dive into the vibrant flavors of the coast with this Paleo Classic Shrimp Ceviche—a fresh, healthy, and utterly delicious dish that highlights the art of citrus-marinated seafood. Perfectly tender shrimp are "cooked" in zesty lime and lemon juice, creating a protein-packed base that's bursting with tangy brightness. Complemented by crisp cucumber, creamy avocado, juicy tomato, and the fiery bite of jalapeños, this ceviche offers a harmony of textures and flavors. Finished with fragrant cilantro and a touch of sea salt, it’s a gluten-free, dairy-free masterpiece that’s ready in just 20 minutes. Serve it with paleo-friendly chips or atop lettuce wraps for a refreshing appetizer or light meal that captures the essence of fresh, wholesome ingredients.
Chop shrimp into bite-sized pieces, about 1/2-inch each, and place them in a large glass bowl.
Pour the fresh lime juice and lemon juice over the shrimp. Make sure the shrimp are fully submerged. Cover the bowl with plastic wrap and refrigerate for 20-30 minutes until the shrimp turns opaque and 'cooked' in the citrus juice.
While the shrimp is marinating, prepare the vegetables: chop the red onion, dice the tomato, seed and mince the jalapeño, and chop the cilantro.
Once the shrimp is ready, drain excess citrus juice, leaving about 1/4 cup of the liquid with the shrimp in the bowl.
Add the red onion, tomato, jalapeño, cilantro, diced avocado, sea salt, and black pepper to the shrimp. Stir gently to combine.
Taste and adjust salt and pepper to your liking.
Before serving, peel and dice the cucumber and gently fold it into the ceviche.
Serve immediately with your choice of paleo-friendly chips, or as a topping for lettuce wraps.
