Optional raw almonds add a delightful crunch, making these treats ideal for paleo diets and clean eating. With just 15 minutes of prep and no cooking required, these chocolate-stuffed dates are a quick, easy, and healthy dessert or snack that will satisfy your sweet tooth while keeping things wholesome. Perfect for sharing or keeping all to yourself, theyβre naturally gluten-free, dairy-free, and refined sugar-free!
Slice open each Medjool date lengthwise and remove the pits if they aren't already pitted.
Prepare the filling by melting the dark chocolate. To do this, break the chocolate into smaller pieces and place them in a heat-proof bowl.
Melt the chocolate by placing the bowl over a pot of simmering water (double boiler method) or gently microwaving in short increments (15-20 seconds), stirring in between to avoid burning.
Once melted, stir in the coconut oil and vanilla extract until well combined and smooth.
Using a small spoon, fill each date with approximately 1 teaspoon of the chocolate mixture. Ensure some space is left at the top for other ingredients.
Optionally, insert a raw almond into the center of each chocolate-filled date for added crunch.
Sprinkle a small amount of shredded coconut on top of the chocolate-filled dates.
Finish each stuffed date with a tiny pinch of sea salt over the top to enhance the flavors.
Place all the stuffed dates onto a plate or tray and refrigerate for at least 15 minutes to allow the chocolate to set properly.
Once chilled, serve the Paleo Chocolate-Stuffed Dates immediately or store them in an airtight container in the fridge for up to a week.
