Preheat a grill or grill pan over medium-high heat.
Drizzle the chicken breasts with 1 tablespoon of olive oil and season with salt and pepper on both sides.
Grill the chicken for 6-7 minutes on each side, or until fully cooked and grilled marks appear. The internal temperature should reach 165°F (74°C).
Remove the chicken from the grill, allow to rest for a few minutes, then slice thinly.
Meanwhile, in a food processor, combine basil leaves, pine nuts, garlic cloves, lemon juice, nutritional yeast, and the remaining tablespoon of olive oil. Blend until smooth to create pesto. Season with additional salt if needed.
Lay out the lettuce leaves. Spread about a tablespoon of pesto over each leaf.
Divide the sliced chicken evenly among the leaves, placing them on top of the pesto.
Slice the avocado, and halve the cherry tomatoes. Evenly distribute the avocado slices and cherry tomato halves over the chicken in each wrap.
Gently fold the sides of the lettuce leaves to encase the filling and enjoy your Paleo Chicken Pesto Wrap immediately!
