Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

In a skillet over medium heat, add 1 tablespoon of coconut oil. Finely chop the onion and garlic and sauté until translucent and fragrant, about 3-4 minutes. Set aside to cool slightly.

In a large bowl, combine ground beef, one beaten egg, sautéed onion and garlic, chopped parsley, salt, and black pepper. Mix until well combined. Set aside.

In another bowl, whisk together almond flour, coconut flour, baking soda, and a pinch of salt.

Add the remaining egg to the flour mixture and mix to form a dough. If the dough is too sticky, add a little more almond flour until you reach a pliable consistency.

Place the dough between two sheets of parchment paper and roll it out to a large rectangle about 10x14 inches.

Remove the top sheet of parchment paper and spread the beef mixture evenly over the dough, leaving about 1 inch of space on the edges.

Using the parchment paper to help guide you, carefully roll the dough and beef mixture into a log, starting from the long edge. Seal the edges by pinching them gently.
