Wash the spinach leaves thoroughly under running water to remove any dirt. Drain and chop them finely.
Boil 2 cups of water in a pan. Add the chopped spinach to the boiling water and blanch for 1-2 minutes until slightly softened. Immediately transfer the spinach to a bowl of ice-cold water to retain its bright green color.
Once cooled, drain the spinach and squeeze out excess water. Set it aside.
