📝 Instructions

7 steps
1

Wash the spinach leaves thoroughly under running water to remove any dirt. Drain and chop them finely.

2

Boil 2 cups of water in a pan. Add the chopped spinach to the boiling water and blanch for 1-2 minutes until slightly softened. Immediately transfer the spinach to a bowl of ice-cold water to retain its bright green color.

3

Once cooled, drain the spinach and squeeze out excess water. Set it aside.

4

In a small pan, heat a teaspoon of oil over medium heat. Add the cumin seeds and allow them to splutter. Finely chop the green chili and add it to the pan. Sauté for about 30 seconds. Turn off the heat and let it cool slightly.

5

In a large mixing bowl, whisk the plain yogurt until smooth. Add the blanched spinach, sautéed cumin and green chili mixture, salt, and black salt (if using). Mix until well combined.

6

Sprinkle the roasted cumin powder and red chili powder over the raita. Adjust seasoning as desired.

7

Garnish with freshly chopped coriander leaves and serve chilled. Pair it with rice, roti, or your favorite Indian dishes.
