Warm your soul with Paigu Luobo Tang, a traditional Chinese pork rib and daikon soup that's as comforting as it is nutritious. Made with tender pork ribs, chunks of subtly sweet daikon radish, and aromatic ginger, this clear soup is a simple yet flavorful staple in Chinese cuisine. The slow-simmering process infuses the broth with rich, meaty depth, while optional additions like Shaoxing wine and white pepper enhance its complexity. Ready in just over an hour, this hearty soup is perfect for a cozy family meal or a boost of warmth on chilly evenings. Garnished with fresh cilantro, itβs a light and healthy dish that pairs beautifully with steamed rice or on its own as a satisfying starter.
Start by blanching the pork ribs: Place the pork ribs in a pot and add enough water to fully cover them. Bring to a boil and let it cook for 2-3 minutes. This helps remove impurities.
Drain the pork ribs in a colander and rinse them under running water to remove any scum. Clean the pot for later use.
Peel the daikon radish and cut it into large chunks, about 1-2 inches thick.
Peel and slice the ginger into thin slices.
Place the blanched pork ribs into the clean pot. Add the sliced ginger, scallions, and 6 cups of water.
Optional: Add 1 tablespoon of Shaoxing wine to the pot to further enhance the flavor.
Bring the pot to a boil, then reduce the heat to low and let it simmer uncovered for 45 minutes.
Add the daikon radish chunks to the pot. Continue simmering for another 30-45 minutes, or until the ribs are tender and the daikon is cooked through and soft.
Season the soup with salt to taste, and add a pinch of white pepper if desired.
Remove the scallion stalks and ginger slices with a slotted spoon. Ladle the soup into bowls and garnish with chopped cilantro, if using.
Serve hot and enjoy this warm, nourishing soup!
