Ingredients

  • 32 oz Frozen tater tots
  • 1 lb Ground beef
  • 1 packet Ortega taco seasoning mix
  • 0.67 cup Water
  • 2 cups Shredded cheddar cheese
  • 1 cup Canned black beans, drained and rinsed
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 0.25 cup Sliced jalapeños
  • 0.25 cup Chopped green onions
  • 2 tbsp Chopped fresh cilantro

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Step 2

Spread the frozen tater tots in an even layer on the prepared baking sheet. Bake for 25-28 minutes or until golden brown and crispy, flipping halfway through for even cooking.

Step 3

While the tater tots are baking, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 6-8 minutes. Drain excess fat if needed.

Step 4

Stir in the Ortega taco seasoning mix and 2/3 cup of water. Reduce heat to low and let simmer for 4-5 minutes until the beef is evenly coated and the mixture has thickened. Remove from heat and set aside.

Step 5

Once the tater tots are done baking, transfer them to an oven-safe serving platter or leave them on the baking sheet.

Step 6

Top the crispy tater tots with the seasoned ground beef, black beans, and shredded cheddar cheese. Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.

Step 7

Remove from the oven and let cool slightly. Add your favorite toppings, including sour cream, salsa, sliced jalapeños, chopped green onions, and fresh cilantro.

Step 8

Serve immediately and enjoy your Ortega's Tater Tot Nachos with friends and family!
