In a medium bowl, combine the sliced beef, 2 tablespoons of soy sauce, 1 tablespoon sesame oil, and the cornstarch. Mix well and set aside to marinate for 15 minutes.

Pour in the beef broth, the remaining 4 tablespoons of soy sauce, hoisin sauce, rice vinegar, and optional chili flakes. Stir well and bring the mixture to a simmer.

Add the cooked noodles, baby spinach, and cooked beef to the skillet. Toss everything together to coat in the sauce and cook for 2-3 minutes until the spinach is wilted and everything is heated through.
