📝 Instructions

8 steps
1

Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

2

While the pasta is cooking, prepare the vegetables. Slice the radicchio into thin ribbons and set aside. Halve the red onion, then thinly slice it. Mince or finely chop the garlic cloves.

3

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and a pinch of salt, and cook for 7–8 minutes, stirring occasionally, until the onion is soft and caramelized.

4

Add the minced garlic to the skillet and cook for an additional 1 minute, until fragrant.

5

Stir in the sliced radicchio and cook for 4–5 minutes, until wilted and slightly softened. Add the butter and let it melt, mixing it into the vegetables.

6

Reduce the heat to low and add the reserved pasta water along with the cooked and drained orecchiette. Toss everything together to combine, allowing the pasta to absorb the flavors.

7

Stir in the grated Parmesan cheese until well combined. Add salt, black pepper, and red chili flakes (if using) to taste.

8

Serve immediately, garnished with extra Parmesan cheese if desired. Enjoy!
