Ingredients

  • 500 g Boneless, skinless chicken thighs
  • 2 medium Sweet potatoes

  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 stalks Green onions, sliced
  • 1 tbsp Sesame seeds

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Peel and dice the sweet potatoes into 1-inch cubes. Toss them with 1 tablespoon of vegetable oil, 1/2 teaspoon of salt, and a pinch of black pepper. Spread evenly on the prepared baking sheet and roast for 25-30 minutes, flipping halfway, until golden and tender.
