Spread 1 tablespoon of cream cheese evenly onto one side of each of the 4 slices of sourdough bread.
Layer 2 slices of cheddar cheese and 2 slices of mozzarella cheese on top of the cream cheese spread for 2 of the bread slices.
Place the remaining 2 slices of bread, cream cheese side down, on top of the cheese layers to form 2 sandwiches.
In a small bowl, mix the softened butter, garlic powder, and chopped parsley until well combined.
Spread the butter mixture evenly over the outside of both sides of each sandwich.
Preheat a nonstick skillet or griddle over medium heat.
Place the sandwiches in the skillet and cook for 3-4 minutes on each side, pressing them gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted.
Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing in half and serving immediately.
