Ingredients

  • 1 medium head red cabbage
  • 2 medium apple
  • 1 medium onion
  • 3 tablespoons white vinegar
  • 2 tablespoons granulated sugar
  • 2 tablespoons butter
  • 1 cup water
  • 1.5 teaspoons salt
  • 0.25 teaspoons ground cloves
  • 1 bay leaf

Directions

Step 1

Remove the outer leaves of the red cabbage and rinse it thoroughly under cold water. Cut the cabbage into quarters and remove the core. Finely slice each quarter into thin strips.

Step 2

Peel and core the apples, then dice them into small pieces. Peel and finely chop the onion.

Step 3

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 4

Add the shredded red cabbage and diced apples to the pot. Stir to combine with the onions.

Step 5

In a small bowl, mix the white vinegar, sugar, and salt together until dissolved. Pour this mixture over the cabbage and apples in the pot.

Step 6

Add the water, ground cloves, and bay leaf. Stir everything together and bring the mixture to a gentle simmer.

Step 7

Cover the pot with a lid, reduce the heat to low, and let it cook for 55-60 minutes. Stir occasionally to ensure the cabbage doesn’t stick to the bottom of the pot.

Step 8

Once the cabbage is tender and has a deep purple color, remove the bay leaf. Taste and adjust seasoning if necessary.

Step 9

Serve warm as a side dish with roast meat, sausages, or hearty stews. Enjoy!
