  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Rinse the pearl barley under cold water in a fine mesh strainer until the water runs clear. Set aside.

Heat a large skillet or saucepan over medium heat. Add butter and olive oil, allowing the butter to melt completely.

Add the chopped onion to the pan and sauté for 3-4 minutes, or until softened and translucent.
