Whether you enjoy them fresh out of the oven or thawed from the freezer, these healthy banana oat muffins are sure to become a family favorite!
Preheat your oven to 375Β°F (190Β°C) and lightly grease a mini muffin pan or line it with paper liners.
In a large bowl, mix together the rolled oats, all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon.
In a separate medium bowl, mash the ripe bananas until smooth. Add the egg, brown sugar, applesauce, milk, and vanilla extract, and mix until well combined.
Pour the wet ingredients into the dry ingredients and fold together until just combined. Be careful not to overmix the batter.
If desired, gently fold in the mini chocolate chips or chopped nuts for added texture and flavor.
Spoon the batter evenly into the prepared mini muffin pan, filling each cup about 3/4 full.
Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
To freeze for OAMC, place the cooled muffins in a single layer on a baking sheet and freeze for 1-2 hours. Transfer them to an airtight container or freezer bag and store for up to 3 months. To enjoy, thaw at room temperature or warm in the microwave for 15-20 seconds.
