Indulge in the rich, velvety delight of Nut-Free Traditional Rice Payasam—a timeless Indian dessert made with fragrant basmati rice, creamy full-fat milk, and the warm essence of cardamom. This nut-free version ensures everyone can enjoy the luscious decadence of this festive favorite without compromising on authentic flavors. Cooked slowly to perfection, the rice absorbs the milk to create a thick, silky consistency, while golden raisins sautéed in ghee add bursts of sweetness. A hint of saffron provides a luxurious aroma and golden hue, perfect for special occasions or a heartwarming treat. Whether served warm or chilled, this nut-free payasam is a celebration of simplicity and elegance, making it an impeccable addition to your dessert repertoire.
Wash the rice thoroughly under cold water until the water runs clear. Drain and set aside.
In a large heavy-bottomed pot, heat 2 tablespoons of ghee over medium heat. Add the washed rice and sauté for 2-3 minutes, stirring frequently, until the rice becomes slightly fragrant.
Pour in the milk and bring the mixture to a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom of the pot.
Once the milk reaches a boil, reduce the heat to low and let the rice cook in the milk. Stir frequently and ensure the milk doesn’t scorch at the bottom. Cook for about 40 minutes or until the rice is completely soft and the mixture thickens.
Stir in the sugar, crushed cardamom, and saffron strands (if using). Mix well until the sugar is fully dissolved.
In a small pan, heat 1 tablespoon of ghee over medium heat. Add the golden raisins and sauté until they puff up. Remove from heat immediately to prevent burning.
Gently fold the sautéed raisins into the payasam. Cook for another 5 minutes, stirring occasionally.
Remove the pot from heat and let the payasam cool slightly. It will thicken further as it cools.
Serve warm or chilled as a dessert. Enjoy the creamy, aromatic, nut-free rice payasam!
